Venison Meatballs

Who doesn’t love make ahead freezer meals? They just seem to make life a little easier. Venison meatballs are a quick and easy meal for those busy week nights. You can use any ground meat or seasonings you want, you can make them ahead of time, have them the same day and feed a crowd, or do both! I typically serve venison meatballs with spaghetti sauce, but I’ve also used BBQ sauce as well. Bonus – all my kids love them and that is what I call winning.

Recipe options. I usually get 24-26 venison meatballs from this recipe. The amount you get will depend on the size you make them. You can half the venison meatball recipe and just make one meal. You can make the entire recipe and split it into a meal for that day and a freezer meal for later. You can freeze the entire batch. You can make all of them in one day and feed a large group. I bake venison meatballs in a baking dish for about 20 minutes, then I cover them in my choice of sauce. Sometimes it’s spaghetti sauce from a jar (if you like a decent amount of sauce to go with each meatball, use 2 jars per 12 meatballs), other times I make my own sauce, and sometimes I use our favorite BBQ sauce. Then I bake another 5 to 8 minutes until the sauce is heated through. Pairs well with pasta and crusty bread.

Ingredients
  

  • 2 pounds ground meat venison, beef, pork, or turkey
  • 1 cup panko crumbs can sub oatmeal or crushed saltines
  • ⅛ to ¼ tsp garlic powder
  • ⅛ to ¼ tsp onion powder
  • ½ to 1 tsp basil can sub with Italian seasoning or parsley
  • 1 cup Parmesan cheese shredded
  • 2 eggs slightly beaten
  • salt and pepper as desired

Instructions
 

  • 400 degrees for 20 mins, add sauce and bake another 5 minutes
