Chewy Chocolate Chip Cookies

Ah yes. The classic chocolate chip cookie. It took me a couple of years to settle on a favorite recipe. There are so many! This, my friends, is a keeper. It very well may be your last chocolate chip cookie recipe. In fact, I’ve tossed the others out. Because my boys have some nut sensitivities, I end up making ½ a batch with walnuts and the other half without. Either way, it makes the perfect chocolate chip cookie. And the most heavenly cookie dough. Not like I ever eat any…by the spoon full (or bowl….whatever). 

Chewy Chocolate Chip Cookies

Ingredients
  

  • 1 c. butter, room temperature
  • 1 c. brown sugar
  • 3/4 c. sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 2 1/2 c. flour
  • 3/4 c. oatmeal, old fashioned or quick oats
  • 1 bag chocolate chips
  • 2 c. walnuts, chopped (optional)

Instructions
 

  • In a large bowl, combine flour, salt, baking soda, and oatmeal. Set aside. In a mixing bowl, cream together butter and sugars. Beat in eggs and vanilla. Gradually mix in dry ingredients. Stir in nuts and chocolate chips. Chill dough for at least an hour.
  • When ready to bake, preheat oven to 350 degrees. I use my medium sized scooper so that cookies are roughly the same size. Scoop dough into balls, place on a cookie sheet or baking stone if you have one.
  • Bake 12-15 minutes. I prefer these just set, so I keep an eye on them and when they are starting to get golden brown, I take them out of the oven. This will give you a chewier texture. If you like your cookies on the crispy side, leave them in until the entire cookie is slightly browned.
  • Remove from the baking sheet or stone and place onto a cooling rack. These freeze extremely well – pull 1 or 2 out of the freezer at a time, pop them into your microwave for 15 seconds and they are perfect! I recommend getting them into a sealed container/package as soon as they are cooled. I've found this preserves their chewiness and freshness.
  • Another wonderful option is to make them into ice cream sandwiches. So, so good! Make them up ahead of time, freeze them and you have the perfect summer treat for your kids (or just for you when the kids aren't watching!).
