Gluten Free Sugar Cookie Bars

Course Dessert

Ingredients
  

  • 1 c. butter, room temperature
  • 3 oz. cream cheese, room temperature
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 1/2 c. gluten free flour (1 to 1 replacement)
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. gluten free sprinkles

Frosting

  • 3/4 c. butter, room temperature
  • 3 c. powdered sugar
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • cream or milk – add 1 tablespoon at a time
  • gluten free sprinkles

Instructions
 

  • Preheat oven to 350 degrees. Prepare a 9×12 pan with parchment paper, lightly spray.
    In a mixing bowl, beat together butter and cream cheese. Add sugars, continue beating together. Add eggs, one at a time, mixing after each one. Mix in vanilla. Add remaining dry ingredients, except sprinkles. Mix until combined. Using a spoon or spatula, stir in 1/2 c. of sprinkles.
    Evenly press dough into the pan. Bake 25 minutes. Cool completely on a cooling rack before frosting.

Frosting Instructions

  • In a mixing bowl, beat together butter and powdered sugar until creamy. Beat in vanilla and salt, add milk or cream – one tablespoon at a time, until desired consistency is reached. Once bars are completely cooled, spread frosting and add sprinkles on top.
    I refrigerate the bars until ready to serve. Perfect to take for picnics in the park!
